Quick London Broil

I use this recipe that Steven actually had up his sleeve when I know we have somewhere to be in the evenings. Marissa had practice and we had some running around to do so I whipped this up in the crock pot in the morning. Add instant potatoes and you're done in a snap, no fast food required on your busy night! I did not include veggies in this recipe but you can always throw in carrots & potatoes if you like. Use a slow cooker liner and you'll have no clean up to do!

Crock Pot London Broil

2 Lb London Broil roast (regular pot roast works too)
1 Packet onion soup mix
1 Can Campbells condensed cream of mushroom soup
1/2 Can water

Place the meat in the bottom of your slow cooker. Mix the soups and water in a bowl until combined. Pour over meat. Cook on low for 7 hours.

Weekend project - home made tomato sauce

My Grandma would most likely spank me with a wooden spoon if I told her that I had to google a recipe for tomato sauce after all of the times that I helped her make it. It's been a while! As usual I looked something up and tweaked it to taste like what I remember. It came out awesome! I have two big containers in my freezer now (not ricotta cheese containers, tupperware will have to do). I might get another big batch of tomatoes and make a stockpile for the winter. We'll see what time allows!

Kristen's Tomato Sauce:

ripe tomatoes

tablespoons olive oil

tablespoons unsalted butter

onion, chopped

cloves garlic, minced

tablespoons dried basil

teaspoon Italian seasoning

cup sweet red wine

bay leaf

tablespoon sugar


1. Bring a pot of water to a boil. Have ready a large bowl of iced water. Plunge whole tomatoes in boiling water until skin starts to peel, 1 minute. Remove with slotted spoon and place in ice bath. Let rest until cool enough to handle, then remove peel and squeeze out seeds. Puree in blender or food processor.

2. In a large pot or Dutch oven over medium heat, cook onion and garlic in oil and butter until onion starts to soften, 5 minutes. Pour in pureed tomatoes. Stir in basil, Italian seasoning and wine. Place bay leaf in pot. Bring to a boil, then reduce heat to low, cover and simmer 2 hours. Stir in a small can of tomato paste and simmer an additional 2 hours. Discard bay leaf and serve or freeze.

Here Goes Nothing

I've never had a blog before so I guess I'm a bit behind the trend. I have alot to share with friends and family but it's hard to do so when everyone is so spread out. This is my way of sharing two things: my hobby of cooking and big events happening in our family. I'll be posting recipes & pictures of my dinner creations as well as news on what everybody is up to.
